I begin with one of my country typical recipes. I hope your ideas, one thing I don´t like to think about is what the hell I´m gonna cook every day. :D


Salmorejo

Ingredients:
Main:
-red tomatoes
-bread
-vinegar
-olive oil
-salt
-garlic
To accompanied:
-hard-boiled egg
-ham (in pieces) If it could be Spanish ham, better.
-Canned tune
•You can used ham or tune, but not together. You have to choose. Or better to say, each dinners or commensals will choose.
The process:
1)Put some cut tomatoes in a mixed and shake them. (Don´t forget remove the peel)
2)Add some salt, some vinegar, some olive oil, a clove of garlic and s some bread. Shake the ingredients again.
•The thicker you want the soup, the more you have to add bread with olive oil.
Ah, if you want this soup will be more soft, you can use part of the bread and part of boiled potato.

3)Put it into the fridge. When you are gonna serve it, put in each plate, a chopped hard boiled egg and some ham or tune.
4)You can decorate each plate with fried bread.
•This recipe can be accompanied by any other recipe (potato omelette, fried fish, crisps, some meat…)

I'm not much a cook but i will share some thing's i've figured out, bacon can be cooked quickly if placed in an iron skillet inside an electric oven under the broiler (cook's really fast!) - soo be carefull, also with left-over food wich taste's better hot i've found if you place your portion of food on a platter with an upside-down bowl on top of the platter - while in an electric microwave this keep's the food moist and hot while avoiding that awfull hardening of good food wich is soo commen. :wink:

Gracias for the pic. lol! I´ll add it to my photo gallery, honey.
I´ll stick a paella recipe but "sencilla" nada de nada. Paella is difficult to cook. :mrgreen:

A "simply" Spanish paella :mrgreen:

MIXED RICE

Ingredients:

A) Sofrito´s ingredients: Fried sauce

- olive oil
- ½ onion
- Garlic (two cloves)
- One small green pepper
- A piece of red pepper
- One tomato
- salt

B) Main ingredients (some of them are optional ok)

- rice (two fists for each person)
- water ( pour double of water than rice)
- Chicken breast
- Some mussels
- Some clams (optional)
- Calamari( optional)
- Some prawns
- A bit of groung saffron
- A cube of Avecrem to add flavour (optional)
- A can of sweet pepper
- Some beer (optional)
- Some white wine (optional)
- Some drops of soy sauce (optional)
- Some drops of Tabasco (it´s a spice sauce but optional)

THE RECIPE

A) Cooking the “Sofrito”

1) Pour some olive oil in a frying pan. Cut the onion and the cloves of garlic into small pieces and put them in the frying pan.
2) Cut the green pepper, the red one and the tomatoe and put all in the frying pan.
3) Add some salt.
4) When the “Sofrito” is pouched, beat it in a mixer and pour the mix in a bigger frying pan, adding some water. (This is the frying pan where you´ll have to put the rest of the ingredients)

B) Getting Ready the meat and the seafood:

B.1) The meat

1) boil or cook chicken´s breats with some salt (cut in small pieces). Don´t forget to remove the fat.
Optional: when the meat is fat free, you can put it in a sauce pan and move it with a bit of white wine.

B.2) Seafood

In the case, the seafood is not boiled yet, cook it with a bito f salt. Then you can remove their shells if you want but you have to peel the prawns.

C) Getting ready the rice:

1) Let “Sofrito” boils and add some ground saffron to put some colour.
2) Add the rice and move it a bit, then add the water (remember double quantity of water than rice)
3) Add the meat and seafood excepting the prawns.
4) Let it cook for 20 minutes at a medium heat , while you move it but Orly a bit, Only to avoid the rice sticks itself. You have to pay attetion because you´ll probably have to pour much water.
5) While the rice is cooking itself, you can add some beer, some props. Of tabasco, some drops of soy sauce, and the cube of avecrem (but all these ingredients are optional) Perhaps you feel like adding only two of them. (My father adds all he finds in the kitchen)
6) Don´t forget to add some salt after tasting it.
7) When the rice is about five minutes to get ready, add the prawns and the sweet pepper (this latter, cut in slices)
And finally, move the frying pan away the fire and let the rice to rest for 10 minutes. You can cover it with a lid or with a clean cloth.
