I have a question.
Is it possible to develop full blown PTSD, if one is very attached to their cat (one of two), and it dies?

Well anything is possible I suppose, but no, one should not develop PTSD. If you are very attached and one dies you will feel grief, which can last for quite a long time.
After a while it might be time to get another cat, maybe a rescue one and save it, give it a good life.
