When other people quote part of posts when responding ...Can I do this with iPhone ? How?

Look at the upper right of the post you want to quote. There a button that says Quote.

you know what else I didn't know?

on the forum page that lists the threads. there's a little search bar. and you can search for a topic or keyword you are interested about. or find an old thread you only half way remember.
