I'm sorry you're struggling in this way at the moment. From what I understand, paranoia comes under the umbrella of psychotic symptoms that can accompany mania. I've certainly experienced it myself and it can be very frightening and disorientating, so I can relate.
For example, during my last full blown psychotic mania in '11, I developed an elaborate persecutory delusion, believed I was under 'Big Brother' style surveillance while in hospital, and even as my mania started to subside, I would feel as if there was a presence watching me whenever I was alone in my room. I also recognise the irritability and mistrust of others you describe as a sign of higher mood states.
It's good you're seeing your therapist in a couple of weeks, but is there any way to get an earlier appointment with a psychiatrist?
In my experience, a medication change (usually the addition of an antipsychotic) has been the most effective treatment and, for me at least, I find it's best to nip the higher moods in the bud before they escalate. Good luck with finding some relief soon.
