I don't disagree with you, you didn't say anything meaningful to disagree with. In fact you might as well have said nothing at all. You can apply that sentence to basically anything if you replace dignity with another word.

I find this thread interesting.

Not completely sure but my initial guess would be something like;

Dignity: about set inclusitivity/exclusivity
Respect: the ordering of sets into hierarchy according to the values of the set

ie if I exclude someone from the set of being 'a person' and include them in the set of being food, it would be perfectly reasonable to cut bits off and perverse the rest for later to keep it fresh. Then after my meal is complete, toss the remains in the bin without any thought at all. Because that is what anyone does to what they consider food. Nobody considers keeping food clothed because the food would be embarrassed.

That is why people want to be treated with dignity. Because not being treated with dignity is an indication that one is excluded from the set that will exclude them from certain unpleasant experiences.
