Is God omniprescient?

A claim often attribute to God is that He's omniprescient (knows what's going on everywhere in the universe at every moment.) Yet being both religious and scientific I believe I came up with a way to scientificly prove God doesn't exist (or at least, isn't omniprescient.)

The physics 'double-slit' experiment shoots a laser beam through a piece of paper with two slits in it. Without going into detail (since it's irrelevant to this) it shows how light particles can be both a wave or a particle depending solely on whether someone's watching. Yet the fact that it varies only because of observation, if a god were omniprescient it should only behave one way. That it does in fact vary means God isn't always watching, or is incapable of doing so, or simply doesn't exist in the first place.
